Ingredients:
- John West Tinned Tuna 200g
- Homestead Sweetcorn canned 50g
- Breadcrumbs 50g
- Cumin
- Garlic
- Tomatoes
- Salt & Pepper
- Brennan’s Burger Buns
- Tartare Sauce (Make Separately)
- Dill
- 2 tablespoons mayo
- 4 large Gherkins chopped finely
- Salt
- Pepper
- Costcutter 3 eggs
- Odlum’s Flour 20g
- MBF Milk 20ml
- 1 Onion (diced)
- Lettuce
- Red onion
- Tomatoes
- Avocado
- Costcutter dressing
- Vegetable oil for shallow frying
Method:
- Start by mixing the tuna, breadcrumbs, cumin, 1 tsp dill, onion finely chopped, 1 tbs mayo, 1 egg, salt, pepper, sweetcorn and 1 tbls mayo in a large bowl.
- Shape into burger patties, dip in flour, egg wash (2 eggs whisked and mixed with milk) and then into panko breadcrumbs.
- Shallow fry these each side for 2 mins @170C until golden brown.
- For the tartar sauce, mix the remainder of the mayo with finely chopped gherkins, dill and lemon juice.
- Assemble the burger and enjoy!
